The region's true personality is guarded in deep, sheltered valleys, places forgotten by time. Modern winegrowing practices hold no sway here. Tens of forgotten varieties live side by side in rocky, poor soils. The fight for survival has made centenary vines as special as they are rare.

To find small plots which express complexity, elegance, harmony and the desired structure in the resulting wines has been our goal from the start. We began by exploring small plots of very old vines in a number of valleys such as Vale de Mendiz, Vale do Rio Torto and others. These grapes are harvested by hand, and only in the morning. They are then transported to the winery in perforated boxes. After careful selection on the sorting table they are channelled into the various winemaking containers (vats, stone tanks and others) where the creation process continues.
